We had the mid-tier course- Azebono ($148++) 14-course menu which includes chawanmushi, 2 sashimi, appetiser, cooked dish, 9 pieces nigiri sushi, tamagoyaki with soup and ice-cream. First up was shirako and chawanmushi in ponzu foam, we were pleasantly surprised by the smooth and tender shirako in a steamed egg dish, the shirako was not fishy at all. It was our first time having aged fish and we were impressed by the umami and depth of flavours packed in the kue sashimi (longtooth grouper), it was aged with dried kelp for 11 days.
Savour delicate fishes sourced from all over Japan such as (L-R) shiotama from Miyazaki, kuromutsu (bluefish) smoked with yuzu kocho, and tender Aji (mackerel). If you are concerned about a strong lingering aftertaste from the aged fishes, rest assured as housemade pickled ginger are served on the side, simply pick up a slice and refresh your palate in between dishes.
