Taiga Dining is an 11-seater Japanese fine dining restaurant that serves an Omakase menu based on the finest seasonal offerings prepared by Taiga Kanekuni, Taiga's chef and founder. He has more than 20 years of experience as a Shokunin of Edomae sushi restaurants in Niigata and Tokyo before coming to Singapore.
This restaurant welcomes you with a rocky landscape at the door, leading you up through a dark narrow crevice to get to the "cave" where the dining experience begins.
Taiga Dining's interior has a dark and contemporary arrangement, furnished with modern dark wood furniture set amidst an abstract mountainscape from Chef Taiga's home prefecture, Kōchi, which provides an intimate and cozy dining experience.
The Omakase menu has three options for you to choose from- Ino Shika Cho (lunch only), Ka Cho Huu Getsu, and Hi To To Se priced at $280, $380, and $480 respectively.
All of the ingredients used only comes from a single trusted source that Chef Taiga has been patronising for the past 10 years. He focuses on wild-caught seafood and obtaining the highest A-grade auction ingredients like Iwashi, Sea Bream, and Anago!
