Heavenly Cloud Yusheng ($58++) is a delightful composition of sliced fresh salmon on a bed of julienned vegetables such as white radish, carrots, pickled ginger and pickled red and green yam, complete with sesame seeds, crackers and roasted unsalted peanuts. Top it off with five spice powder, plum sauce and yuzu ponzu and you are ready to lohei!.
