RASEN- New SG Exclusive Sake By Chef Willin Low And Yaegaki Sake & Spirits

RASEN (螺旋) is a new SG exclusive sake made in collaboration with celebrity chef Willin Low and one of Japan’s oldest and most prominent breweries, Yaegaki Sake & Spirits. Specially made to be paired with Singaporean cuisine, this exquisite sake also celebrates Yaegaki’s arrival in Singapore as well as Singapore and Japan’s years of outstanding relations.

“Spiral” Inspiration

RASEN (螺旋) means “spiral” in Japanese, it expresses Yaegaki’s beliefs and honest repetition of trusted manufacturing methods developed through tradition. The spiral shape reflects Yaegaki’s ambition to constantly search for new developments and to spread its sake and food culture globally. The colourful spiral shapes explores the representation of Japanese and Singaporean culture, coming together through sake. The 3 different types of rice used in brewing RASEN - Yamadanishiki, Kinuhikari and Akebono rice are represented by each of the 3 spiral shapes on the label, overlapping and blending together like a melting pot of cultures and flavours.

Pairing RASEN with Local Food Delights

This collaborative sake is a blend of two types of sake, “Yaegaki Junmai” which has a good balance of umami and acidity, and “Yaegaki Extra Sweet”, a refreshing citrusy sake. Its smooth finish and light aftertaste with lingering umami is perfect for pairing with classic Singaporean dishes such as satay, char kway teow and oyster omelette.

We were honoured to be invited to RASEN preview session where we got to enjoy RASEN with local inspired dishes created by Chef Willin. In fact, the Chef Willin has played a hand in the creation of RASEN, by giving valuable advice on how the sake should pair with local foods, and suggestions to improve the sake after multiple tasting sessions.

The pairing menu featured seafood delicacies such as scallop her kiao, oyster omelette spaghettini, flavourful Iberico pork satay and a creative fusion dish- krapow basil minced chicken prata pizza. Indeed, RASEN’s refreshing acidity and umami complemented these robustly flavoured dishes very well. Best served chilled, RASEN was incredibly smooth and its light aftertaste did not overpower the complex flavours of the local delights.

About THE YAEGAKI BRAND – AN EMBODIMENT OF HARDWORK AND TRADITION
Yaegaki started out as a sake company founded in the Banshu-Hayashida area of Hyogo Prefecture in 1666. The “Yaegaki” brand, established in 1881, was founded on the brewery’s distinctive and outstanding sake-brewing methods, handed down from generation to the next through its 350-year history.
