New Seasonal Ippudo Mala Series Review: Featuring Mala Tonkotsu & Chef’s Special Tsukemen Until 31 August 2023

Love mala and ramen? Enjoy the superb duo of mala and ramen with IPPUDO’s new Seasonal Mala Tonkotsu Ramen and Chef’s Special Tsukemen Japan Mala Version.

In place of their signature thin ramen noodles, Seasonal Mala Tonkotsu Ramen ($21.85++) features wavy medium thick noodles in IPPUDO original pork tonkotsu broth, fragranced with IPPUDO original kaeshi soy sauce. Mala chilli and pepper, combined with a mix of aromatic spices, and a final dash of Japanese sansho pepper bring on the heat of this spicy and scrumptious ramen. Load up on protein with the pork belly chashu and chicken chashu, other accompanying ingredients include sliced white leek, Korean chilli pepper, black pepper, Japanese nori seaweed, marinated half boiled egg and coriander for the ultimate mala ramen experience.

The overall flavour profile of this ramen is spicy and robust; we could still savour the pork tonkotsu broth despite the addition of the strong mala spices. It is a certainly a mood lifter, on days when you crave a spicy twist to your standard bowl of ramen. We would say that the spiciness level is relatively manageable, we enjoyed sipping the spicily flavourful broth on its own too!

Next up is the Chef’s Special Tsukemen Japan Mala Version ($24.85++) featuring super thick noodles served along with IPPUDO original pork tonkotsu soup mixed with secret kaeshi sauce mix, mala and Japanese-style karashibi spices. Pick up the noodles, dip it into the mala soup and slurp the now hot and spicy noodles! Other toppings include sliced white leek, mixed chilli pepper, young corn, Japanese nori seaweed, marinated half boiled egg and coriander. The young corn was nicely seasoned and took the spicy edge off the dish. Last but not least, the Kakuni pork belly side dish was tender and bursting with juicy umami flavours.

We appreciated the super thick and springy dipping noodles but wished they could be cut evenly, for the perfect noodle slurping experience. We found the dipping soup spicier and more numbing than the Seasonal Mala Tonkotsu Ramen. Therefore we suggest that you try the ramen before digging into the tsukemen. All in all, the tsukemen is a refreshing addition to IPPUDO’s regular ramen lineup. Tip: Give the tsukemen broth a good whisk before dipping the noodles.
