Una Una - Known for their affordable hitsumabushi (grilled unagi ricebowl), they recently introduced 3 new ways to jazz up your unagi dining experience.

If you are new to unagi cuisine, hitsumabushi is a traditional Japanese dish with lots of finely chopped grilled eel served on top of rice. It is served alongside condiments such as wasabi, chopped green onions, and dashi broth/tea.

How to eat hitsumabushi

Traditionally, there are three ways to enjoy hitsumabushi. Divide your dish into 3 portions. The first portion is eaten as it is. The second is accompanied by condiments such as seaweed, green onions and wasabi. The third portion is similar to the second, with the addition of dashi broth (eat it like porridge).

Una Una introduces new condiment additions such as seaweed wrap, ikura (salmon roe) and a spicy sauce.

Una Una’s 3 new ways to enjoy hitsumabushi (DIY handroll)

1) Place rice and unagi on seaweed wrap. Enjoy!

2) Place rice and unagi on seaweed wrap, then add ikura.

3) Place rice and unagi on seaweed wrap, then drizzle spicy sauce over it.

3 + 3 = 6 ways to enjoy hitsumabushi!

Indeed, we enjoyed experimenting with the new combinations and discovering new flavours. Firstly, the seaweed wrap lifted the sweetness of the unagi with fresh and earthy tones, it was a delightful handroll. Secondly, the plump pearls of salmon caviar popped in our mouths, bursting with sashimi goodness. Thirdly, the spicy sauce was a little underwhelming for us, as the already sweet and flavourful unagi sauce remained centre stage.

The unagi was well seasoned but we wished for the exterior to be crispier. It would certainly add another dimension to the bits of grilled eel and rice melting in your mouth.

On a side note, the rice was slightly sticky and dense for us. We usually prefer our Japanese rice to be light and fluffy, especially in a rice bowl. Nevertheless, the texture was perfect for sushi/making your own handroll.
