[GIVEAWAY] NANI COOKS! — Tebasaki Wings

During our previous NANI Cooks! series, we attempted Nikujaga, a comforting Japanese stew that is a crowd favorite especially amongst Japanese students living away from home. This time, we tried making Tebasaki Wings, a Nagoya-style fried chicken dish that’s different from the usual Karaage or Tonkatsu that you might already be aware of! After this attempt, this dish is definitely becoming one of my favorite styles of fried chicken for that the sweet and savory glazed chicken wings pair so well with an ice-cold beer. What’s even better? While you can deep fry it, you can also opt for the healthier version by making it with an air fryer!

What is Tebasaki?

Nagoya no Tebasaki was accidentally invented by a restaurant owner in Nagoya. Chicken wings used to be considered “discarded” cuts of the bird and were only used as a last resort after they experienced a shortage of chicken meat. Tebasaki (手羽先) literally translates to “wing tips”, and unlike your regular Karaage-style chicken — Tebasaki wings have no breading, and it utilizes the whole chicken wing (bone and all). The crunch comes from frying the chicken before it is tossed in a sweet, and sticky sauce.

Let’s get it started!


Ingredients

Serves 2

200g Chicken Wings

2 tbsp Corn Starch

1/2 tsp Salt

1/2 tsp Coarse Black Pepper

2 tbsp Sugar

1.5 tbsp Soy Sauce

1 tbsp Mirin

1 tbsp Sake

1 tsp Ginger Juice

1 Clove of Garlic

1/2 tbsp Black Vinegar

1 tsp Sesame Seeds

1 tsp Shichimi Togarashi


Step 1:

Preheat your air fryer at 200°C for 3 minutes.

Pro Tip: We used an air-fryer this time which is definitely an easier and simpler way, but you can always opt for frying the chicken in a pan if you do not have an air-fryer!


Step 2:

Season your chicken wings with salt and pepper.

Add corn starch to your chicken wings and coat thoroughly, making sure that there are no lumps of starch.


Step 4:

Place the chicken wings into your air fryer at 160°C for 24 minutes, flipping them halfway through.

Pro tip: Lightly coat your air fryer with oil before you place the wings to prevent them from sticking!


Step 5:

Chop your garlic.


Step 6:

Add your chopped garlic, sugar, Mirin, black vinegar, soy sauce, Sake, and ginger juice into a heated sauce pan.

Stir consistently on medium heat till it boils and when you achieve a sticky consistency!


Step 7:

Remove your crispy chicken wings from the air fryer…

…and thoroughly coat them in your sauce!


Final step:

Plate up, and finish with sesame seeds…

…and Shichimi Toragashi!


Viola!

And just like that, your Tebasaki wings are done!

These sweet and savory wings are the ideal snacks and perfect accompaniment for your drinking sessions or movie nights! The entire wing is soaked with the sweet and salty glaze while the Shichimi Toragashi gives the wings a subtle spicy kick! Despite being coated in the glaze, the chicken wings still retain their crunch.
