sen-ryo Celebrate Its Second Birthday With A Traditional Tuna Cutting Ceremony & Unveils New Blue-Fin Tuna Dishes

Celebrate sen-ryo's second birthday this 17 May 2023 with a traditional ‘Kaitai’ (かいたい, tuna cutting ceremony) passionately and skilfully led by Executive Chef Jems Bong and his team!

Prepare to have your senses tangled in a mesmerizing tradition and witness the 'Kaitai', an art form crafted over generations, as sen-ryo unveils a spectacle that will linger in your memories. Presenting a 50kg sustainably farmed bluefin tuna, nourished with parasite-free fare and air-flown directly from Amami Oshima, Japan. You may also expect to be mesmerised by the process, as well as enlightened on lesser-known parts of the fish.

After the ceremony, partake in a bidding session where you can express interest in different parts of the fish, including two portions of the tail, eye, and kama (collar), one portion of the jaw, and five portions of a sashimi platter that includes off-cuts such as head and cheek as well as meat near the bones. 

The dish will be allocated to the fastest ‘bidder’ at a fixed price. Popular akami, chutoro, and otoro cuts will be available in the ‘Kaitai’ exclusive menu.

That's not all! Get a taste of sen-ryo's new limited-time menu of bluefin tuna dishes prepared in various waysThey offer dishes like Hon Maguro Salad ($18.80), a refreshing combination of akamai and avocado slices topped with chuka dressing and thinly sliced red onions. Hon Maguro Katsu ($20.80), served with medium-rare akami coated with freshly made breadcrumbs and finely shredded refreshing cabbage.
