Toku Nori newly opened with a unique handroll and sake concept, welcoming diners to its 2-storey pre-war heritage shophouse located along the bustling Telok Ayer Street. The contemporary izakaya presents an impressive lineup of premium handrolls featuring scallop, tuna and uni, best paired with a meticulously curated selection of sake.

Classic Japanese Handrolls with a Contemporary Twist

Singapore chef-owner Aeldra Leo redefines classic Japanese handrolls with her vast experience in the Japanese culinary scene, coupled with a handpicked selection of ingredients and condiments to craft exceptional handrolls for the local palates. Fun fact: Toku Nori's crisp seaweed is sourced from Ariake Ocean and handpicked at the peak of freshness to preserve its natural flavour and crisp texture.

Enjoy the best of Toku Nori handrolls with Toku Nori set menu ($38++) which consists of 5 Japanese handrolls; Hokkaido Hotate Handroll, Hamachi Handroll, Maguro Handroll, Salmon Handroll and Engawa Handroll, with an optional add-on flight of sake pairings ($18++). Each handroll in the set is also available for à la carte order.

The set menu kicks off with the lightest tasting seafood, gradually transitioning to the richer, fattier fish selections. Highlights include the succulent Hokkaido Hotate Handroll ($9++) topped with Japanese yuzu kosho, promising a burst of citrus zest and aromatic heat.
The recommended sake pairing for this succulent scallop handroll is the Funaguchi Sparkling- an extra-rich Genshu (undiluted) sparkling sake with a refreshing fruity aroma.

Next, the Maguro Handroll ($8++) features tender, sweet and buttery Japanese tuna topped with smoked onion cream and crispy shallots. We had the Tomizu sake which is brewed using 20% more rice than ordinary sake making ratio, the result is a rich, juicy and surprising taste on the palate.

We then savoured the Engawa Handroll ($9++) which is made from the fin of the Karei fish from Miyagi Prefecture, adorned with a Japanese garlic miso glaze. We certainly enjoyed this rich fish delicacy, best paired with the Tenryohomare sake which was crisp, dry, light and airy, with very pleasant light spice notes.

In addtion, fans of uni and foie gras are in for a treat; with premium rolls such as (left) Wagyu & Uni Handroll ($32++)- crafted from wagyu karubi, premium bafun uni and luxurious caviar, and the signature aburi (right) Foie Gras Handroll ($16++).

Toku Nori also serves up a variety of small plates to complete your dining experience. Seafood delights include Hamachi Crudo ($14++), Maguro Poppers ($12++) and Aburi Salmon Crispy Sushi ($16++) which was a lovely combination of soft salmon tartare and crunchy sushi rice.

Craving for some meaty flavours? Kakuni Pork Belly ($12++) presents tender melt-in-your-mouth chunks of succulent pork coated in a savoury soy sauce glaze. Additionally, spice things up with the Chicken Ribs ($14++), a modern twist on the traditional Japanese karaage; prepared with a unique cut of bone-in chicken thigh, coated with a subtly sweet yaki sauce and finished with kizami nori flakes.

Sweets & Beverages

On top of a wide variety of sake, Toku Nori is also home to an assortment of Japanese cocktails, beer, spirits and liqueur. Non-alcoholic beverages include premium tsuki matcha concoctions such as Matcha Latte ($5.50) and Sakura Matcha Latte ($6), available in both hot and cold options.

Last but not least, what’s better than warabimochi with matcha? Toku Nori crafts their very own warabimochi in-house! Choose from 3 options; the classic kinako, nutty goma or earthy matcha .
