New Modern Japanese Omakase Concept, Shin Terroir, Serves Grill-Inspired Cuisine And French Wines

Singaporeans are undeniably blessed with an abundance of authentic Omakase options to choose from. Yet, our appetite for new experiences is insatiable! Here is a new addition to your list— Shin Terroir, a new modern Japanese-grilled Omakase concept that has just opened its door at 80 Tras Street.

They are a fresh F&B concept by Miru Collection (a Singapore-based hospitality group renowned for the management of lifestyle hotels in Japan). Helmed by Singapore and Hokkaido chef duo, Chef Nicholas Lee and Hokkaido native Takeshi Nakayama, anticipate an intimate dining affair in a 10-seater setting adorned with grey stone decor and softly illuminated by ambient lighting.

Here at Shin Terroir, they offer a 15-course menu ($198++ per person). Each dish is meticulously prepared over a custom-made three-tier grill from Osaka filled with hot Kishu bincho coals. You may expect dishes like Negitoro Yakinigiri, served with nanatsuboshi rice toasted to crisp perfection and adorned with rich tuna belly and Iranian caviar that adds a burst of delightful brininess.

Their signature dishes include the Mille Feuille, which comes with layers of chicken gizzard and chives, elegantly draped with a single sheet of chicken skin. Additionally, they have a homemade sweet tare-glazed Tsukune, featuring a sweet tare glaze and a unique blend of finely minced chicken and pork combined with mountain yam. This dish is paired with a soy-marinated egg yolk, which offers a savoury twist compared to the typical fresh egg yolk accompaniment.

End the meal with a Dessert inspired by a local flavour— a Kaya Mochi enriched with Japanese brown sugar, toasted hojicha custard, and azuki beans.

Don't overlook their carefully curated wine selection, boasting a vast collection featuring 150 French wines. This remarkable collection includes renowned labels from the prestigious Burgundy and Champagne regions, as well as hidden gems from boutique and artisan vineyards such as Marguet and Jerome Prevost. They present notable labels, including Jacque SelosseFrederic Savart champagne, and more.
